Thessaloniki rewards people who slow down and let the city come to them, which makes five nights the right call — the upper city around Ano Poli is where the real texture is, and it takes a couple of days before you stop rushing past things and actually start noticing them. The food scene here is not Athens food, and locals will tell you so with some feeling: go to the central market on Aristotelous in the morning when it's working rather than performing, and make at least one proper sit-down meal out of meze at a place that has no English menu outside. Most visitors spend all their time on the waterfront promenade and around the White Tower, which is fine but leaves out the neighborhoods north of Egnatia Street where the city gets quieter, older, and considerably more interesting. The Byzantine churches scattered through the city are easy to walk past without realizing what they are, so it's worth spending twenty minutes with a simple map before heading out, not for a history lesson but just so you don't accidentally skip the Rotunda or Agios Demetrios. Timing matters in summer because the heat between noon and four is genuine and the city empties out accordingly, so structure days around morning exploring, a long lunch, and then back out in the late afternoon when things cool down and the light gets good.
